We love breakfast over here! We especially love pancakes and thought I would share with you our favorite recipe... We have shared it with friends so many time, hope you enjoy it as much as we do!
Ingredients:
1 cup of flour (we use Bob's Red Mill, 1 to 1 Baking Flour, Gluten Free)
3/4 tsp baking soda
1/2 tsp salt
2 eggs
1 cup plain or vanilla organic yogourt
1/2 cup water
1 tbsp butter, plus additional for skillet
Whisk flour, baking soda and salt together in a medium bowl.
In another bowl, beat eggs, add yogourt, water and melted butter.
Add dry ingredients and beat until well combined.
Melt butter in skillet then spoon in 1/4 cup of batter.
Cook until bubbles appear on surface and edges are set.
Flip pancake and cook until undersides are golden (1 to 2 minutes per side).
Now for the best part, serve with:
fresh fruits and whipped cream,
frozen fruits ( my kids could eat those all day),
jam and nut butter,
apple and cinnamon,
or just plain maple syrup!
Oh, and by the way, we always double our recipe and rarely have any leftovers...
